Well, it took a bit longer than anticipated but welcome to episode 2 of  What's Cookin' on Ask a Chef.com!!!

What's Cookin' is our own video cooking show designed for users with high bandwidth.

We've put together really tasty and quick lessons. We are trying to get recipes that all have a preparation time of under 15 minutes! You can watch an instructional video, get the recipe and instructions and prepare a new tasty meal!

Episode 2 again features Chef Gary Arthur of Seattle WA preparing a quick tasty recipe of  Chicken Breast with Cranberry Mango Chutney!

Our Recipe
Chicken Breast w/ Sweetened Cranberry Mango Chutney Categories:   Fish-Dinners-Appetizers
Prep Time- 8-15 Minutes Description- An easy recipe with a nice flare .
Serves- 1-2 Nutritional Info- Not Vegetarian
Ingredients:
Chicken Breast
1 Medium Sized Mango
1/2 Red Onion
Ginger
2 oz. Sweetened Cranberries
1/2 Tsp. of the following:
  • Cinnamon
  • Nutmeg
  • Cumin
  • Curry Powder
  • Paprika

Fresh Lemon or Lemon Juice
1 Cyranno Pepper
White Wine
Honey
Flour
Slat/Pepper
Extra Virgin Olive Oil
1 Oz Butter
Instructions:
Pre-heat stove top to medium/high heat. (350º for digital ovens)
Add the virgin olive oil to the pan and let heat
Season both sides of the chicken breast with a bit of Salt and Pepper
Cut the chicken breast in half
Dust the chicken in a bit of flour
Place the chicken in the pan to cook, flipping occasionally
The chutney will be prepared as the chicken is cooking, plea be sure to mind the chicken while completing the chutney.

Cranberry/Mango Chutney
Chop 1/2 onion
Peel and Chop 1½ inches of Ginger
Pre heat another pan on a medium setting
Place 1 oz. butter in the pan
Place the onion and ginger in the recently heated pan
Cut the mango in half, cut away skin and chop
Add 2 oz sweetened cranberries and mango to the onion/ginger pan
Add ½ Tsp. each of the cinnamon, nutmeg,cumin,curry powder, and paprika
Add a bit of salt, a pinch of saffron, and cyranno pepper
add a splash of white wine, lemon juice and honey

Cook and stir until everything has been heated thoroughly and the mango is soft and easily broken apart.
If the chicken has not been removed from the pan, removed the cooked chicken and place on a serving plate.
Spoon the chutney on the top of the chicken and Enjoy!
